Restaurant opening




My 5 months of FREEDOM are almost up. We open the restaurant again for the new season on Saturday and because it is school holidays it will be busy. The scallops are fat, the crayfish plentiful and because it's too early for kingfish I'll put a crispy skin salmon dish on the menu. Probably with lemon rissotto cake and I'll smoke the frames for stock and reduce it down with veges, port, balsamic and brown sugar to make a black treakle sauce. My son and his partner are excited as two year olds to be taking over, with a little mix of trepidation because they have never been in the business before. It's nice to have their vision and energy around.

alright...when simply reading the words 'crispy salmon' and a humble list of stock ingredients make my mouth water, it's a sure sign that dinner tonight will not be mac and cheese from a box.

next I want to hear about the lemon rissotto...please.

Lovely restaurant. Wish i could stop by for that meal. I hope you have a great opening. As with Fern, my mouth is watering. And I too would love a taste of the lemon rissotto.

Fern - all I can ask for is that people treat food as art. I'll post the risotto as long as you don't open a cafe next door!

Hi Dave (and Denise as well)

Just found your blog somewhat by accident. The past couple of weeks my mind have wandered back to NZ several times, and thus to you guys as well.

It seems from reading your blog that you're all doing fine. I miss you, the cafe, Coromandel, NZ, the lots quite a bit for the time.

Things are pretty great here in Denmark, even though Autumn is coming along.

Take care down there, i'll be keeping an eye out on your blog. Best of luck with the cafe and the bach as well (loved that place)
